This is how you make a home-made mozzarella cheese if you ever want to. All you need is 1 gallon milk, 1 rennet tablet crushed, 1/2 cup bottled water (1/4 cup for rennet, 1/4 cup for citric acid), 2 tsp Citric Acid (divided, 1 dissolved in the water, 1 dry) 1/2 tsp salt.
Then add some tomatoes,basil, olive oil and balsamic sauce, some touch of creativity and VOILA! you have a delicious italian appetizer on your dish.
